Ackee Cheesecake Filling
Cream and ackees are a wonderful pairing. This filling is a wonderful add-in for a coffee cake, muffin or pastry.

Combine all ingredients in a food processor, pulse till smooth.

Alternately, puree the ackee, then cream together the cheese, sugar and flour, when smooth add the ackee, juice (if using) and extract

These cute danishes are easy to make using store bought dough and the silkiest ackee cheesecake filling!

(or danish or croissant dough)

Ackee Cheesecake Filling

Roll out prepared dough to about a 1/4 inch thick and cut 3 inch squares

Tug edges of square out slightly then pull to the centre and press down to secure.

Proof according to package instructions - usually about 20 minutes to an hour depending on room temperature till puffed up slightly.

Pipe or spoon cream cheese filling into the centre.

Bake according to package instructions - or at 375F for 8 to 12 minutes.

Remove from oven and let cool briefly

Optional finishing: glaze with melted jam; drizzle with icing or dust with powdered sugar
