Chickee Salad Sandwich – Chicken Version

To make this chicken salad you’ll need some leftover chicken (I used one large chicken breast), mayo and your favourite add-ins. Buns, sandwich bread, flat bread or wraps for serving, as always, get creative with it! This chicken salad sandwich skips out on regular mayo and uses ackee mayo instead!

I had some homemade dark rye buns left over from a test recipe and so tucked my chickee salad into that with a bit of greens, it was delicious! I was kind enough to share it with the hubby who thoroughly enjoyed it as well.

Ackee mayo is used for a unique twist on chicken salad

Ingredients
  • 1 1/2 cups Cooked chicken, chopped or shredded
  • 1/2 cup to 3/4 cup Ackee Mayo
  • Salt & Pepper, to taste
  • Juice of 1/2 lemon
  • Add-ins: red bell peppers, green onions, serrano chili, red onions, garlic, cilantro
  • Sandwich bread, buns or wraps to serve
Directions
  • Step 1 Combine chicken, your favourite add-ins and lemon juice in a mixing bowl
  • Step 2 Add as much ackee mayo as you like to achieve a consistency that suits your tastes.
  • Step 3 Taste and adjust seasoning.
  • Step 4 Serve as preferred
  • Step 5 Enjoy!
