Ackee Peanut Butter Crunch Cake

Ackee and peanut butter are a match made in heaven. This delectable treat is nutty, creamy, crunchy and all over delicious!

Ingredients

  • 1 Recipe Easy Ackee Cake
  • 1 Recipe Peanut Butter Buttercream
  • 1 Recipe Chocolate Peanut Butter Crispies
  • Honey roasted peanuts as needed
  • Milk chocolate ganache optional

Instructions

  1. Split cakes into 2 layers each to make four layers.
  2. Fill with buttercream, crispies and peanuts
  3. Frost the cake, chill and drizzle with ganache if desired.

Recipe Notes

To make milk chocolate ganache:

  1. Pour 1 cup of milk chocolate chips or broken milk chocolate pieces into a bowl.
  2. Heat up 1/2 cup of heavy cream just to a boil
  3. Pour heavy cream over the milk chocolate and let stand for about a minute  then stir till smooth, let cool briefly before pouring on to cake
